We love zucchini bread! It’s so fun to grab some big zucchinis from the garden and grate them up in my Salad Shooter and then proceed to make loaves and loaves of zucchini bread. The kids (and adults) in our house just eat it up. Here is my recipe:
Zucchini Bread
3 eggs, beaten
1 3/4 cups sugar (can add up to 2 cups sugar)
1/2 cup canola oil
1/2 cup unsweetened apple juice or unsweetened applesauce
3 teaspoons vanilla
2 cups white flour
1 cup whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 teaspoons cinnamon
2 teaspoons cocoa (optional)
2 cups grated raw zucchini
For top of bread:
1 Tbsp. sugar
1/4 teaspoon cinnamon
Beat together the eggs, sugar and oil. Add the remaining ingredients and mix until well blended. Pour into two greased loaf pans. Mix sugar & cinnamon and sprinkle on top of batter. Bake 55 minutes at 350 degrees.
*If you use more than one cup of whole wheat flour, the bread may darken faster, so watch it with care the last 5 minutes of baking, as you may need to take it out earlier.
This is a great recipe to make with your children and even the littlest ones can help by stirring with a wooden spoon!
