Wondering what’s for dinner tonight? Here’s a frugal and filling meal that our family enjoys, served with a simple salad made with dark greens.

Potato Pizza Supreme


1 lb ground beef
1/2 c. onion, chopped
1/2 tsp. oregano
1/2 tsp. basil
1/2 tsp. sugar
green peppers and olives (optional)
1 15 oz can tomato sauce

4 c. potatoes, sliced

1 can cheddar cheese soup {yes, I am aware canned soups are bad for me ;) }
1/2 c. milk
1 c. mozzarella cheese
1/2 c. Parmesan cheese

Brown beef and onion. Combine the tomato sauce, oregano, basil and sugar (you can add your veggies to this mixture). Set sauce aside. 


Stir cheddar cheese soup and milk until smooth and then stir in potatoes and milk. Spread this mixture in the bottom of a 9×13 pan. Pour tomato sauce mixture over top. Don’t stir. Cover pan tightly with foil.


Bake at 375 degrees F for 45 minutes (or until potatoes are softened). Remove foil; add cheeses over top. Return to the oven and bake uncovered until cheese is bubbly (about 15 min). Let cool a bit and enjoy!


Lesson Learned: When I first made this recipe, I felt like the potatoes were still a bit too firm for my taste, even after baking the full hour. So I microwaved them for about 10 minutes in water to soften them up a bit. That also allowed me to shorten the first baking time to 30 minutes.

  1. Sounds yummy and filling too! I don’t buy canned soups and am thinking of trying to make white sauce and adding cheese to it in place of the soup.

    • Yup, you could definitely try making your own sauce. I make a cheddar cheese sauce for our homemade mac and cheese. I’ve also thrown around the idea of trying evaporated milk in place of the soup!
