Growing up, my grandmother, mother and all my aunts made bread, buns and cinnamon rolls from scratch. While I haven’t perfected our family method, I got the idea to try my hand at making dinner rolls (mostly) from scratch. I chose a recipe from an old Taste of Home magazine and tweaked it a bit to my tastes. What follows are what I hope to be simple instructions on how to make these buns yourself! These would go great with Baked Mostaccioli and a salad for a easy, time-saving dinner.
Herbed Parmesan Dinner Rolls
1 1/2 cups warm milk (70-80 degrees F)
2 Tbsp. butter, softened
1 Tbsp. sugar
1/2 cup grated parmesan cheese
1 Tbsp Italian seasoning
2 cups bread flour
2 cups whole white wheat flour (I get mine here)
4 tsp. active dry yeast
Place all ingredients in bread machine pan in the order suggested by the manufacturer. Select dough setting (you might want to check the dough after 5 minutes, adding 1 to 2 Tbsp. extra flour or water if needed). In my breadmaker, the dough rose right up to the top of the machine!
After dough cycle is complete, put dough on lightly floured surface. Divide into 24 portions and shape into balls (instructions below). Place 3 inches apart on greased baking sheet, covering with lightly sprayed plastic wrap to keep the dough from drying out. Let rise in a warm place for 30 minutes or until double in size. Bake at 350 F for 15-20 minutes or until lightly browned. Spread with warm butter and enjoy!
Here are the directions that my grandmother taught me for making nice round buns. It takes a few tries to get it right–or at least it did for me! I hope this makes sense…
To make round buns, grab a piece of dough between your hands and form it into a circle, bending the edges slightly down.
Next, put your pointer and thumb fingers around the top of the dough and push it through a little with the pointer finger of your other hand to form a sort of parachute. Squeeze the rest up between your two fingers. The bottom of the dough piece will come off, leaving you with a nice rounded ball of dough.
