This week’s tasty treat is apple bread! September is the month of the year when apples ripen on the tree and also go on sale at the grocery store! Pick (or pick up) some apples and try this yummy recipe.
Fall Apple Quick Bread
2 eggs, beaten
1/2 c. butter or shortening
1 c. sugar
2 Tbsp. buttermilk
1 tsp. soda
1/4 tsp. salt
1/4 tsp. cinnamon
2 c. flour
2 c. raw apples, finely chopped
Beat eggs, then add the remaining liquid ingredients. Mix well. Add dry ingredients and mix on medium speed. Add in apples, mixing on low speed until well combined. Pour into one large bread pan. If this is looking too full, as mine did and then proceeded to overflow the first time I made this recipe, use two pans and fill them halfway. Before baking, sprinkle the top of the dough a mixture of 1 Tbsp. sugar and 1/4 tsp. cinnamon.
Bake for 55 minutes in a 325 degree oven. This bread is so tasty, especially because of the crispy cinnamon and sugar top. Enjoy warm; you don’t even need butter!
