Today’s lunch recipe is a simple fare that I make for my kids. Even my daughter, at almost 12 months, will eat the muffin and pizza sauce.

English Muffin Pizzas (serves 3)
3 Whole Wheat or Sour Dough English Muffins, split in half

Pizza Sauce or Tomato Sauce with Italian Seasoning, amount to your liking, I use about 1/2 cup total sauce

Pepperoni, Green Peppers, Onions and/or any other toppings you like, amounts depend on how high you want to pile ’em!

1 Cup Mozzarella or Pizza Cheese

Toast the English Muffins in a toaster, so they don’t get soggy when the toppings are put on them.
Spread on pizza sauce, meat & vegetable toppings, and cheese, equally dividing the toppings between the 6 halves of muffin.

Broil on top rack of oven for one minute or until cheese is melted, bubbly and golden brown (watch carefully!)

With two for each person, I serve these with carrot & celery sticks and dip and mango or grapes and it makes for a filling lunch for small children.
