It’s officially Fall time now and for me it’s the time to start baking all things apple and pumpkin.  This year I got the idea from a friend to make pumpkin flavored no bake cookies.  So I thought I would attempt to use my traditional Chocolate No Bake Cookie recipe and just make a few slight changes.

These cookies are fairly cheap, super easy, and take only a few short minutes to make.  In fact much like the original version of this cookie I usually have all the ingredients needed on hand.

You will need:

1 1/2 sticks butter or margarine

1/2 cup milk

1 tsp. vanilla

1 1/2 cups sugar (I use plain white sugar)

1 1/2 Tablespoons of Pumpkin Pie Spice (you could adjust this amount to your liking)

1 – 3.4 oz. package vanilla instant pudding

3 cups quick cooking oats

First in a thick heavy pot (I use my pressure cooker pot) combine your butter, milk and vanilla.  Turn on low heat until your butter melts.

While the butter is melting I combine my sugar and pumpkin pie spice in a small bowl.
Then add your sugar mixture to your milk/butter mixture and stir until it is blended well.

Turn up your heat and bring this mixture to a rolling boil.  As soon as it starts boiling set your timer and stir while boiling for 2 minutes.

 
At the end of 2 minutes remove from heat and add in your package of dry pudding mix stirring it for about 2 minutes or until it is mixed well.

Once the pudding is mixed well add in your quick cooking oats and stir until all the oats are coated with the butter/sugar/pudding mix.  Then using a teaspoon scoop out your cookies and place them on either aluminum foil or waxed paper and allow them to cool.  The cookies will be a little gooey to begin with but will be ready to eat when they are cool and have firmed up.
