These cookies aren’t necessarily very healthy for you, with the exception of the oatmeal, but they are sooo good! This recipe makes a huge batch, which may be good for large families, and they freeze relatively well. Or you can bless someone with some yummy cookies!

Ingredients:
 
2 c. brown sugar
2 c. white sugar
2 sticks margarine or butter
6 eggs
4 tsp. baking soda
2 1/2 Tbsp. corn syrup
3 c. peanut butter
9 c. oatmeal
1 large bag chocolate chips (I use semi-sweet)

Cream sugars and margarine together.
Beat in the eggs.
Add the peanut butter, syrup, and baking soda.
Mix in the oatmeal.
Mix in the chocolate chips by hand (or use your large Kitchenaid mixer, it can handle the thick dough).

Drop by heaping teaspoonfuls on cookie sheet and bake for 10 to 12 minutes (I find 12 works best) in 350 degree oven. Makes 12 dozen cookies. Keep them stored in an airtight container after cooling. If they start to get a bit tough, put a slice of apple in the storage container or microwave for a few seconds.
